Carol's Bannock

3 cups flour
dash salt
1 tsp baking powder

Home Made Montreal Steak Spice

Dry Rub for 4 Steaks:

2 tbsp paprika
2 tbsp black pepper
3/4 tbsp salt
1 tbsp garlic
1 tbsp onion
1 tbsp cilantro (best freshly chopped)
1 tbsp dry dill
1/2 tbsp red peppers 0r 1/4 tbsp cayenne

Mix well and use as a dry rub.

Watermelon Lemonade

1 cup fresh-squeezed lemon juice
2 cups fresh watermelon puree, strained through a coarse strainer to remove seeds
12 tablespoons simple syrup (to make: 1 part sugar to 1 part water, boiled)
3 cups cold water
Stir it all together and serve over ice. Garnish it with a thin watermelon or lemon wedge, if you’re feeling fancy.

Fudgey Brownies

1 1/3 cup flour
1 tsp baking powder
1/2 tsp salt
1 cup butter
1 cup cocoa
2 cups sugar
4 eggs
1 1/2 tsp vanilla

Blend and pour into 9X13 greased pan. Bake at 350 for 30 minutes.

Fast Reese's Peanut Butter Cookies

1 package Betty Crocker's Peanut butter cookie mix
24 miniature Reese's peanut butter cups, unfoiled

Prepare cookie mix as directed on the package. Shape into even sized balls and back in mini muffin tin just until they are barely golden brown. While cookies are very warm in the tin, push the Reese's cups into the cookies. Remove from tin before they are completely cooled.

Makes 24 cookies

How to Microwave Rice

1 1/2 cups basmati, brown or white rice
3 cups water

Combine, cover and microwave on high 10 minutes then low 10 minutes.

Paprikash Chicken

4 tbsp or 1/2 of a stick of butter
1 medium onion, finely chopped
1 - 3 1/2 pound chicken, chopped into pieces
1 green pepper, chopped
1 large peeled tomato or 1 - 14.5 ounce can diced tomatoes, undrained
2 cloves garlic, finely chopped
1 tbsp paprika
salt and pepper
1 1/2 cups water
1 cup sour cream
2 tbsp flour
Heat butter in a large pot (that has a lid). Add onion and saute over low heat until translucent. Add chicken and brown lightly on both sides. Add green peppers, garlic, tomatoes and paprika. Stir in water. Bring to a boil. Reduce to heat to low and cook 35 minutes or until chicken is tender. Remove chicken to a platter and keep warm. Mix sour cream and flour together. Add some of the pan fluid to sour cream to temper. Then add sour cream back into chicken fluid in pan. Thicken.

Dumplings for sauce:

3 cups of flour
1 cup (and up to 1 1/2) cups water
2 eggs
1/2 tsp salt
1 tbsp of butter

Mix ingredients. Boil large pot with salt water. Wet a wooden cutting board and place 1/3 of dough on it. Using a sharp knife, flick off 1 inch strips into the water. Stir pot occasionally and keep water simmering. Cook 5 to 10 minutes after the last batch is added. Drain and toss in butter. Serve immediately.

Slow Cooker Hamburger Casserole

1 1/2 lbs lean ground beef
3 medium potatoes, thinly sliced
1 medium onion, thinly sliced
3 medium carrots, thinly sliced
1 celery rib, thinly sliced
10 oz frozen peas
1 tsp salt
1/4 teaspoon pepper
10 oz can tomato soup
3/4 cup water
2 tsp bouillon powder
3 drops of Worchestershire sauce

Scramble fry ground beef in frying pan until browned. Drain well. Turn into 3 1/2 quart slow cooker. Layer next 7 ingredients. Mix soup, water, Worchestershire and bouillion powder together. Add to slow cooker. Cook on Low 8-10 hours or High 4-5 hours. Makes 8 cups.

Chocolate Oatmeal Haystacks (contains peanuts)

I haven't tried this recipe, but they all seem to be roughly the same ingredients.

2 cups sugar
3 Tbsp. cocoa
1 stick butter
1 Tsp. vanilla
2 cups oats
1/2 cup milk
1/2 cup peanut butter

Mix sugar, cocoa, milk, butter and vanilla. Bring to a boil; cook and stir 5 minutes. Remove from heat and stir in peanut butter; then add oats. Spoon on to waxed paper or greased aluminum foil or a cookie sheet; cool.

Carol's Strata

12 slices day old bread
½ lb. grated cheddar cheese
5 eggs
2 ½ cups milk
1 tsp. mustard
1 Tbsp. minced onion
1 tsp. salt
black forest ham
cooked bacon slices broken into chunks

Remove crusts from bread and slice into ½ inch cubes. Grease 9 x 13 pan. Put half of bread in pan; top with ham and bacon and half of the cheese. Top with rest of bread cubes and pour egg mixture over cubes. Put remaining cheese on top and press down so that all the cubes get soaked. Cover with thin foil. Put in fridge for an hour or overnight. (I usually grease the tin foil so that it does not stick to the cheese. I bake it covered until about the last 15 minutes and I remove the tin foil so the top will brown a little.

Bake 350 for at least an hour. Make sure it is cooked in the centre.

MEAL IN ONE MEATLOAF

Heat oven to 375

Combine in large bowl, 1.5 lbs ground beef, 1 c. saltine crumbs, 1/2 of a whole onion peeled and diced, 2/3 c. of condensed tomato soup, keeping the rest for topping, 1 egg and 1/4 t. each salt and pepper.

Lightly grease 9X9 baking pan. Layer 6 medium peeled and sliced to 1/8" potatoes, the rest of the onion, and one drained can of corn.(If you prefer another veggie like peas or beans, use that instead).

Top off with meat mix and the rest of the soup.

Cover with foil and bake for 1 hour.

Quick Replacements

Egg Substitute:

1 banana = 1 egg in cakes

2 tbsp cornstarch = 1 egg


Whisk 1 tablespoon flax seed powder (put through coffee grinder) and 3 tablespoons water to form a paste.

Light Brown Sugar: 1 tablespoon molasses to 1 cup white sugar. Mix well.


Dark Brown Sugar: 2 tablespoons molasses to 1 cup white sugar. Mix well.
